quite possibly by favorite salad any time of year quite possibly by favorite salad any time of year but most definitely in the fall! hearty kale, honeycrisp apples, roasted sweet potato, feta 😮‍💨 need I say more 😍

ingredients:
1 bunch kale, stems removed
1 sweet potato, diced & roasted
1 honeycrisp apple, sliced
1/3 cup dried cranberries
1/4 cup walnuts chopped
1/4 cup goat cheese or feta

For Dressing:
1/4 cup olive oil
3 tbsp balsamic or red wine vinegar
3 tbsp apple juice
3 tbsp honey
1/2 tsp italian seasoning

instructions:
Start by prepping your sweet potato to roast. Dice into bite sized pieces and roast in the oven for about 20 minutes at 400F or in the air fryer for 10 minutes at 400F. 
While the sweet potato roasts, prep your other ingredients- chop kale & slice the apple. In a mason jar (or bowl), shake/mix together all ingredients for the dressing. 
In a large salad bowl, add prepared kale with about 1/2 the dressing. Using clean hands, massage it into the kale. Add the rest of the toppings and the remaining dressing. Sprinkle with sea salt & enjoy!
homemade apple butter 🍎 this is basically FALL homemade apple butter 🍎 this is basically FALL IN A JAR😍 and it will make your house smell amazinggggg in the process

ingredients:
-5 to 6 small apples, diced into pieces, I leave the skin on 
-1/2 cup coconut sugar
-1 tbsp cinnamon
-1 tbsp vanilla bean paste (or extract but I recommend paste for more flavor!) 
-1/4 tsp ground cloves
-2 tbsp water 

instructions:
-to a crockpot, add all ingredients & mix. cook on high for 6 hours. after this, the apples will be dark brown in color. carefully add all content to a food processor (let cool if necessary) and process til smooth. 
-add to a mason jar (if too hot, let cool before covering with the lid). add to toasts or anything you’d like 🥰 store in the fridge for up to 2 weeks!

pumpkin gnocchi 🧡✨🎃 saw these cute pumpkin pumpkin gnocchi 🧡✨🎃 saw these cute pumpkins last fall and knew I had to try my spin on them in the next season! like my other gnocchi recipe variations (cauliflower, sweet potato, butternut squash), my version is made with cassava flour to be gluten/grain free— and tossed in browned butter + parmesan so what’s not to love 🤤

gnocchi ingredients (makes 30 pieces or 3-4 servings):
-1 can pumpkin 100% purée 
-1 + 1/4 cup cassava flour 
-pinch of salt 
-rosemary sprigs 

for cooking:
-1.5 cup water, for cooking 
-3 tbsp salted butter, browned 
-sprinkle of parmesan 

instructions:
-to a mixing bowl, combine pumpkin purée and about 1 cup of flour. using a spoon or clean hands, mix until a dough begins to form. add the additional 1/4 cup cassava flour and knead until a dough ball forms. if your dough is too wet, add a bit more flour until it starts to feel solid. 
-cut the dough ball into 4 parts. portion out the dough into 1/2 inch balls (the smaller the better as they will expand as they cook!) 
-using a piece of string or a toothpick, make the lines around the pumpkin. place a sprig of rosemary into the top for the stem. 
-to a skillet pan with raised sides, add the water for cooking and bring to medium-high heat. place the gnocchi pumpkins in the water leaving some space in between each one. place the lid on top and let simmer for about 10-12 minutes or until the gnocchi pieces are fully cooked through and change to a dark orange color. 
-once cooked through, carefully drain the water leaving the gnocchi’s in the pan. drizzle with browned butter and sprinkle with grated parmesan. serve and enjoy!
gouda, apple & prosciutto grilled cheese 🍎 noth gouda, apple & prosciutto grilled cheese 🍎 nothingggg beats a good grilled cheese and this one is divineeee😍

when we lived in the Netherlands, Michael and I would always make these with fresh Gouda from the local cheese farm. The best memories 🇳🇱

ingredients:
-2 slices of sourdough bread 
-1 pat of butter
-1 or 2 slices Gouda
-1 or 2 slices mozzarella 
-2 slices prosciutto 
-3 thin slices honeycrisp apple 

instructions:
layer your ingredients onto the pieces of bread, adding apples last. add butter to a pan at medium/low heat. cook each on side for about 3 mins each or until golden brown and melted. *tip: if you’re making multiple sandwiches, heat the oven to 325F and keep them in the oven to stay warm and melted as the others cook on the stove! slice and serve with your favorite tomato soup:) enjoy❤️

ingredients:
-1 honey crisp apple, core removed 
-3 dates 
-3/4 cup milk 
-sprinkle of apple pie spice blend (I used @primalpalate)
-1 serving vanilla protein powder 
-1 tbsp almond butter
-2 tbsp oats, optional 

blend all ingredients together in a blender until fully smooth. sprinkle some more apple pie spice on top and enjoy🍎
creamy tuscan chicken meatballs🧡 an easy, cozy, creamy tuscan chicken meatballs🧡 an easy, cozy, comforting meal to ease into fall recipes 🍂

meatball ingredients:
-1 lb ground chicken
-1 egg
-2/3 cup almond flour or breadcrumbs
-1/4 cup chopped spinach 
-2 tsp granulated garlic
-1 tsp salt 
-cracked black pepper, to taste 
-big drizzle of olive oil, for cooking 

sauce ingredients:
-1/2 white onion, finely chopped
-1 cup cherry tomatoes, halved
-5 cloves garlic, minced
-1 1/4 cup chicken bone broth
-1 can coconut milk
-1/4 chopped basil, packed
-1/2 cup chopped spinach 
-1 tsp italian seasoning blend 
-1/2 tsp sea salt
-cracked black pepper, to taste 
-1 tsp arrowroot or tapioca starch + 1 tbsp water to make a thickening slurry 

instructions:
-in a mixing bowl, combine all meatball ingredients until well incorporated. portion into small meatballs (smaller will cook more evenly on the stovetop). 
-to a skillet pan on medium heat, drizzle a generous amount of olive oil to coat the pan. once sizzling, add the meatballs and cook about 3-4 minutes each side until golden brown. remove from the pan and set aside. 
-to the same pan, add onion and sauté until translucent. next, add the garlic and tomatoes for 2 minutes or so. then add the bone broth, coconut milk, salt, pepper, and italian seasoning blend. add the lid and let simmer. 
-to a small small bowl, combine arrowroot starch (or tapioca or cornstarch) with 1 tbsp water to make a slurry. add to the sauce to help thicken it up. 
-once the sauce is creamy, add back in the meatballs and let simmer for a few more minutes on low heat. serve with rice, pasta, or on its own and enjoy!
peach + prosciutto flatbread 🍑 summer’s not q peach + prosciutto flatbread 🍑 summer’s not quite over yet which means peaches are still having a moment! 🧡 I love making flatbreads for a quick lunch or appetizer, and this one pairs perfectly with @athleticbrewing non-alcoholic beers! 🍻

flatbread ingredients (or substitute a store-bought flatbread!)
-1 cup all purpose flour + more for sprinkling 
-1/2 cup plain Greek yogurt 
-1 tsp baking soda 
-pinch of salt
-optional: drizzle of olive oil + sprinkle of granulated garlic 

toppings:
-garlic infused olive oil 
-1/2 peach, thinly sliced 
-2 slices of prosciutto 
-fresh mozzarella, sliced
-fresh basil leaves 
-drizzle of balsamic glaze 

instructions:
-in a mixing bowl, combine all flatbread ingredients with a spoon or clean hands. once the dough comes together, knead into a dough ball until a stable dough forms. sprinkle more flour where needed. 
-roll out the dough ball with a sprinkle of flour until it’s pretty thin. or for best results, let the dough rest at room temperature for 30 minutes prior to rolling. 
-preheat the oven to 350F. add to a parchment lined baking sheet. drizzle with a bit more olive oil and sprinkle with granulated garlic. bake for 10-12 minutes, remove from the oven, and add the toppings. 
-note** when adding fresh mozzarella, drain the liquid and let it sit on paper towels to soak up ANY moisture. this will ensure your flatbread doesn’t get watery. 
-after adding the toppings, bake for 10 more minutes or until crispy and the cheese is browned to your liking. remove from the oven, top with sliced basil and balsamic glaze. enjoy!

if you have ripe avocados, make this avocado pesto if you have ripe avocados, make this avocado pesto pasta sauce 🥑 it’s an easy way to sneak in some veggies while still enjoying pasta— serve with some grilled chicken to add some protein and you’ve got yourself a well balanced meal!

ingredients (serves 2):
-8oz of your favorite pasta 
-1 avocado 
-1/2 cup basil 
-small handful of spinach
-3 cloves garlic 
-1/2 lemon, juiced
-1 tbsp lemon zest
-1 tbsp olive oil 
-sea salt & pepper to taste 
-1/2 cup cold water (can sub pasta water if you prefer warm!)
-parmesan for grating on top 

instructions:
-boil your favorite pasta to package instructions.  if you’d prefer the sauce warm, use a measuring cup to scoop and reserve pasta water and set aside. if you’d prefer your sauce cold, use cold water! 
-to a food processor or a small blender, blend the rest of the ingredients until fully smooth. if your sauce is too thick, add a bit more water until it’s to a pouring consistency. 
-toss the drained pasta in the sauce and top with grated Parmesan. serve with grilled chicken or on its own. enjoy🥑

ingredients (for the tacos):
-2 chicken breasts, cubed & trimmed
-2 tbsp olive oil 
-1/2 lime, juiced 
-2 tbsp honey 
-1 tsp cumin 
-1 tsp smoked paprika 
-1 tsp garlic powder
-1/2 tsp oregano 
-1/2 tsp sea salt
-cracked black pepper, to taste 
-6 corn tortillas, warmed 

for the salsa topping:
-1/2 cup pineapple, cubed into small pieces
-1 small Pablano pepper, seeded and diced 
-1/2 small red onion, finely diced
-1 small tomato, chopped 
-1 small avocado, cubed
-1/2 cup cilantro, chopped 
-1/2 orange, juiced 
-sprinkle of sea salt to taste 

instructions:
-to a bowl, whisk together olive oil, seasonings, honey, and lime juice until smooth. next, add cubed chicken pieces and coat in the marinade until all pieces are covered. 
-to a pan on medium-high heat, cook the chicken for about 2-3 minutes per side or until fully cooked through. 
-for the salsa, add the chopped pineapple, Pablano, red onion, tomato, avocado, and cilantro to a bowl. juice 1/2 orange and toss. sprinkle with sea salt to taste. 
-to assemble the tacos, start by warning corn tortillas on the stove until golden to your liking. add cooked chicken to  the tortillas, followed by the pineapple salsa. serve with an @athleticbrewing NA brew and enjoy!

ingredients (makes 8-10 popsicles):
-24 oz tub vanilla greek yogurt (if using unsweetened, sweeten with honey/maple syrup to taste)
-1/2 cup wild blueberries 
-1 small bar of dark chocolate, melted 
-optional, 1/2 tbsp coconut oil to harden chocolate shell

instructions:
-to a blender, blend greek yogurt and blueberries until smooth. portion into a popsicle mold with sticks and freeze for a minimum of 5 hours to fully set. 
-once the popsicles are fully frozen, remove from the mold and dip in melted chocolate. optional, use coconut oil in the melted chocolate to help harden the shell. store in the freezer until ready to eat and enjoy🫐

creamy lemon & dill salmon 🍋💛 if you loved m creamy lemon & dill salmon 🍋💛 if you loved my tuscan salmon recipe, you’ll love this lemon & dill variation! it’s saucy, flavorful, and just so so good. I love to serve with rice or pasta to really soak up all the sauce 😍

ingredients:
-3 fresh salmon fillets (seasoned with salt, pepper, granulated garlic, and paprika)
-1/2 white onion, finely chopped 
-4 to 5 cloves garlic, minced
-3/4 cup broth 
-1 cup canned coconut milk
-1 small lemon, juiced 
-about 1/4 cup fresh dill, finely chopped (or more if you love dill!)
-1 tsp arrowroot or tapioca starch + 1 tbsp water to make a slurry (to thicken the sauce!)
-1/2 tsp sea salt 
-cracked black pepper, to taste 
-olive oil for cooking salmon 

instructions:
-heat a few tablespoons olive oil on medium-high heat until hot. season the salmon filets with a generous sprinkle of granulated garlic, paprika, salt, and pepper. start by cooking the salmon skin side up for about 2-3 minutes or until golden brown. flip and cook for an additional 2-3 minutes (or until salmon is cooked through to your liking). if the pan gets too hot, turn the heat down and let it finish cooking on low-medium heat. 
-remove the filets and set aside. add the diced onion to the pan and cook until translucent. next, add the minced garlic. once fragrant and lightly golden, add in vegetable broth, coconut milk, lemon juice, salt, and pepper. let simmer to thicken. 
-combine arrowroot/tapioca starch with 1 tbsp water to make a slurry. add to the sauce to thicken up more. once it begins to thicken, add chopped dill. 
-lastly, add salmon fillets back into the sauce and let simmer for a few more minutes. serve with rice, pasta, or on its own. enjoy 🍋💛

ingredients (serves 2):
-1 cup vanilla greek yogurt 
-1/3 cup @truvani chocolate protein powder 
-1 tbsp raw cacao powder
-1 tbsp pure maple syrup 
-1 tbsp cashew butter 
-crushed graham crackers for dipping 

instructions:
-to a small mixing bowl, add greek yogurt, protein powder, cacao, maple syrup, and cashew butter. mix until smooth and combined with no clumps. top with crushed graham cracker crumbs and serve with your favorite fruit or more graham crackers for dipping. enjoy!

teriyaki salmon burgers with grilled pineapple + a teriyaki salmon burgers with grilled pineapple + avocado 🍍🥑 if you’re a salmon lover like me, this recipe is for you!! the key to making these is using fresh, high-quality salmon fillets just like you would buy to make salmon the normal way 🔑 it makes suchhhh a difference in flavor!

ingredients:
-2 salmon fillets
-2 egg whites (no yolks)
-1/3 cup breadcrumbs or almond flour
-1 tbsp teriyaki sauce 
-a shake of salt, pepper, and granulated garlic 
-avocado or olive oil for cooking

for topping:
-sliced pineapple, grilled
-sliced avocado 
-more teriyaki sauce
-brioche bun 

instructions:
-start by carefully removing the skin and cutting your salmon fillets into cubes. cover the cubes with a sheet of plastic wrap or parchment paper. using a meat mallet (or something sturdy) pound the salmon until it’s finely minced. 
-transfer minced salmon to a bowl and combine with breadcrumbs, egg whites, seasoning, and teriyaki sauce. I’ve found using gloves and combining with your hands is the easiest way to mix everything together. 
-form into 3 to 4 burger patties. heat a tablespoon or so avocado oil on the stove at medium heat. once hot, add your burgers and cook for about 2 minutes each side until fully cooked through. 
-to the same pan as the burgers, add sliced pineapple rings and cook until golden brown and caramelized on each side. 
-for assembly: toast your bun. add a pineapple ring, the salmon burger, a drizzle of teriyaki sauce, and sliced avocado. enjoy!

roasted tomato pasta + gnocchi 🧡 an easy weekni roasted tomato pasta + gnocchi 🧡 an easy weeknight meal you can use with fresh cherry or grape tomatoes! this is one of those meals that feels fancy but is soooo easy 🍅

ingredients:
-1 pint container of cherry or grape tomatoes (I used multi-colored grape tomatoes!)
-1 shallot, halved
-5 cloves of garlic 
-olive oil 
-1/2 tbsp Italian seasoning 
-sea salt to taste
-1/2 cup milk of choice (I used @a2milkusa but I’ve also use canned coconut milk before too!)
-1/4 cup pasta water to thin it out 
-16oz gnocchi (see other recipes for my homemade cauliflower gnocchi!)
-optional: parmesan for topping

instructions:
-preheat the oven to 400F. to a small baking dish, add tomatoes, shallot, garlic cloves, oregano, and salt. drizzle everything in a generous amount of olive oil until everything is coated. bake for 25-30 minutes or until slightly bubbly. 
-while baking, boil gnocchi to package instructions. after about 3-5 minutes, the gnocchi should rise to the top. (note: for pasta water, before draining use a measuring scoop to remove from 1/4 cup from the pot and set aside).
-remove from the oven a careful transfer to a heat safe blender (I used my @vitamix) using a large spoon or spatula. add milk and pasta water. blend until smooth. 
-rinse the gnocchi in cold water to prevent sticking. pour over blended sauce and toss together. top with grated parm or red pepper flakes. enjoy!

1-ingredient fruit pops (just fruit!) 🍓🥭 hom 1-ingredient fruit pops (just fruit!) 🍓🥭 homemade popsicles all summer long!!☀️ all you need is your favorite fruit (use whatever you like or have on hand), a blender, and a popsicle mold (I got one on amazon for $10 or less!)

STRAWBERRY MANGO 🍓🥭
-2 cups fresh strawberries (optional, adding a tbsp honey or sweetener of choice depending on ripeness of your berries!)
-2 cups fresh mango 

*note: you don’t need sweetener for these (especially if you choose in season fruits!) but depending on the ripeness of the fruit could make them less sweet/more sour so adjust as needed. 

instructions:
-In a blender, start by blending the strawberries until a smooth purée forms. add to a bowl (preferably with a pouring spout) and set aside.
-In the blender (rinsed) add mangos. blend until puréed
-using the popsicle mold, layer the strawberry and mango until each mole is just until the fill line. add the lid and popsicle sticks. freeze for a minimum of 4 hours. 
-before eating, let thaw for about 10 mins.

homemade guacamole 🥑 one of my repeat summer re homemade guacamole 🥑 one of my repeat summer recipes that I can’t believe I’ve never shared on the feed! my mother-in-law taught me a trick to use fresh orange instead of lime, and while it might not be the most traditional, it gives it a touch of sweetness that so so good! 🍊🧡

ingredients:
-3 to 4 ripe avocados 
-1/2 red onion, finely diced 
-1 small Roma tomato, finely diced
-1 bunch cilantro, chopped
-1 jalapeño, seeded & diced (optional!)
-1 medium orange, juiced 
-flaky sea salt 
-served with my favvvv @sietefoods chips

instructions:
-scoop your avocados into a large serving bowl. mash then using a fork or potato mashers. next, add diced red onion, tomatoes, cilantro, and juice from an orange. combine and mash until it’s to your desired texture (I like mine on the chunky side!)
-add flakey sea salt to taste and serve with chips or veggies to dip. enjoy! 🥑

easy appetizer idea 💡 goat cheese with raspberr easy appetizer idea 💡 goat cheese with raspberries, walnuts, mint leaves, and honey 🍯🩷 soooo easy to throw together for a quick summer appetizer or alongside a charcuterie board!

ingredients:
-1 goat cheese log
-about 1/2 crushed walnuts 
-raspberries, slightly mashed
-fresh mint leaves
-big drizzle of honey 
-your favorite crackers to serve 

-add walnuts to a ziplock bag and gently crush with a rolling pin (or buy pre-crushed walnuts!). add them to a plate and press the walnuts into the goat cheese log to coat it. 
-add the raspberries (optional, gently mash with your hands as you add or add them whole), mint leaves, and a big drizzle of honey. serve with your favorite crackers and enjoy 🩷🍯
