baked potato wedges 🥔 with greek yogurt ranch— recipe below!

this is suchhhh a simple recipe that we make all the time in our house!! I love to serve these with burgers, bowls, sandwiches, wraps, even by themselves as a snack 😂 the dip is super simple but so good— like a cross between ranch and tzatziki, either way you can’t go wrong 😍

ingredients:
-4 to 5 golden potatoes (larger / longer the better for wedges)
-2 tbsp avocado oil 
-1/2 tbsp paprika 
-1/2 tbsp granulated garlic 
-1 tbsp oregano 
-1/2 tsp sea salt (more or less to taste)
-cracked black pepper, to taste 

Greek yogurt ranch:
-1/3 cup plain Greek yogurt 
-1/2 lemon, juiced (or less to taste)
-1 tbsp dried dill 

instructions;
-cut potatoes lengthwise into thick wedges. I cut each potato in half, then in 3-4 wedges per half. 
-toss the wedges in oil and seasonings. add them to a parchment lined baking sheet. bake at 400F for 30-40 minutes or until crispy and golden brown. 
-combine the dip ingredients in a small bowl. serve and enjoy!

INGREDIENTS:
3-4 fresh salmon fillets
1/2 white onion
5 garlic clove
1 cup cherry tomatoes halved
3/4 cup vegetable broth
1 cup canned coconut milk
1 tsp arrowroot starch or tapioca starch
2 tsp Italian seasoning
1 cup fresh spinach
1/2 cup fresh basil leaves
1 tsp salt
1/2 tsp pepper
drizzle of olive oil for cooking

coconut shrimp 🍤 gluten-free / paleo option wit coconut shrimp 🍤 gluten-free / paleo option with an optional (but delicious) sweet & spicy sauce🌶

ingredients:
~2 cups large raw shrimp, peeled & deveined 
-1/4 cup tapioca flour (can sub reg flour or GF blend)
-2 eggs
-3/4 cup unsweetened coconut, shredded 
-1/2 cup GF panko breadcrumbs (or almond flour)
-1 tsp paprika 
-1 tsp granulated garlic powder
-1/4 tsp sea salt, more to taste 
-cracked black pepper 
-coconut or avocado oil, for cooking 

sauce:
-2 tbsp coconut aminos
-1 tbsp sriracha 
-1 tbsp honey
-sesame seeds 

instructions:
-pat dry your shrimp. if using frozen, allow them to thaw, drain the liquid, and pat dry. 
-grab 3 bowls. in the first bowl, add tapioca flour. in the second, whisk 2 eggs. in the third, combine coconut, panko/almond flour, granulated garlic, paprika, sea salt, and pepper. 
-using tongs, dredge each shrimp first through the flour, then the egg, and lastly the coconut mixture. repeat for each shrimp. 
for cooking:
-heat coconut or avocado oil in a skillet on medium/high heat until sizzling. add the shrimp and cook for about 2-3 minutes per side or until golden brown and crispy. 
-for air fryer, cook the shrimp at 400F for about 5 mins (or 2.5 mins each side). 
-serve with rice, broccolini, and drizzle with the sauce. enjoy!

buffalo chicken + zucchini meatballs 🧡 an easy buffalo chicken + zucchini meatballs 🧡 an easy dinner idea or perfect appetizer for a group ☺️ with hidden veggies!!

ingredients:
-1.5-2 lbs ground chicken
-1 egg
-1/2 cup almond flour
-1 small/medium zucchini,shredded/liquid drained
-2 tsp garlic powder
-1 tsp sea salt
-cracked black pepper
-1 tsp dried dill, optional
-1/2 cup buffalo sauce, for tossing 

ingredients:
-start by shredding zucchini into a towel or thick paper towel. gently squeeze out the excess water from zucchini and add to a large mixing bowl.
-in the large bowl add ground chicken, egg, almond flour, zucchini, and spices. Using a spoon or your hands, combine the ingredients until a mixture form and all ingredients are well incorporated.
-roll to form mixture into uniform balls (about 2 oz each). 
-add each meatball to a baking sheet (with a wire rack to make sure the excess fat doesn’t pool while the meatballs bake). 
-bake for 20 minutes at 400 degrees F. once baked, toss the meatballs in a bowl with buffalo sauce. serve and enjoy!

MEDITERRANEAN ORZO SALAD— recipe below lately MEDITERRANEAN ORZO SALAD— recipe below 

lately I’ve been prepping this to have on hand for lunches— it’s the kind of salad that keeps really well in the fridge and is packed with veggies🥒

ingredients:
-1 cup orzo, dry (I love @jovialfoods cassava flour orzo for GF)
-1 cup cherry tomatoes, halved
-1/2 red onion, finely diced (I forgot it in this video and it was equally delicious without it if you don’t like onion!)
-1 red bell pepper, finely diced
-3 mini cucumbers, sliced
-1/4 cup kalamata or green olives, sliced/pits removed
-1/2 cup fresh basil leaves, chopped
-100g feta or about 1/2 cup, crumbled
-salt & pepper to taste

dressing ingredients:
-1/4 cup olive oil
-3 tbsp white wine vinegar
-1 tsp honey, optional for a touch of sweetness 
-1 tsp dried oregano

instructions:
-start by cooking orzo to package instructions. once cooked, drain the water and rinse with cold water to reduce sticking. 
-while the orzo cooks, chop all your produce: tomatoes, bell pepper, onion, cucumbers, olives, basil. Add all ingredients to a large mixing/serving bowl. 
-In a small jar or bowl, make the dressing. Add olive oil, white wine vinegar, oregano, and honey (if using). Shake it all up in the jar, pour on the salad, and mix until combined.
-Last, add the crumbled feta and toss in with the rest of the salad. Serve warm or cold and enjoy!

-3 tablespoons honey
-1 teaspoon garlic powder
-1/2 teaspoon ground ginger
-salt and pepper to taste
-1 teaspoon arrowroot or tapioca flour
-1 tablespoon water

fluffy oatmeal pancakes 🥞 can we take a moment fluffy oatmeal pancakes 🥞 can we take a moment to appreciate this stack 🥹😍 only 6 simple ingredients + a one bowl recipe ✨

ingredients (makes 6-8 pancakes)
-1 cup oat flour 
-1.5 tbsp chia seeds
-2 tsp baking powder
-1 egg
-1 tsp vanilla extract 
-1 cup oat milk 
-maple syrup for topping 

instructions:
-combine all ingredients in a bowl. let the batter sit for 10-15 minutes. this is important to let it thicken up so you have fluffy pancakes!
-heat a pan or griddle to medium heat. add a tiny bit of coconut oil or butter to pan to melt (optional: I *carefully* wipe out the excess with paper towels so the pancakes cook evenly) 
-use a 1/4 measuring cup to portion out the pancakes. allow them to cook for 2-3 minutes per side (resist the urge to flip until bubbling and golden brown)
-repeat with remaining batter. top with maple syrup and enjoyyyy!

homemade flatbread with pesto + veggies! 🌱 i’ homemade flatbread with pesto + veggies! 🌱 i’ve been obsessed with these flatbreads lately— only a few simple ingredients and really easy to prep ahead / freeze extra dough to make anytime 🫶🏻

flatbread ingredients (makes 1 large “pizza”, serves 2):
-1 cup all purpose flour + more for sprinkling (can sub GF all purpose flour 1:1 but it can be a bit more crumbly to work with)
-1/2 cup plain Greek yogurt 
-1 tsp baking soda 
-pinch of salt
-optional: drizzle of olive oil + sprinkle of granulated garlic 

toppings:
-fresh pesto (my homemade recipe is linked in my profile!) 
-sautéed mushrooms
-sliced sweet peppers
-cherry tomatoes, sliced
-fresh mozzarella, drained & pat-dried 
-arugula or spinach for topping

instructions:
-in a mixing bowl, use a spoon to combine greek yogurt, flour, baking soda, and salt. mix until a dough starts to form. once the dough comes together, use clean hands to knead into a dough ball. to a clean, floured surface, add the dough ball and continue to knead until stable and holds together. sprinkle more flour where needed. 
-drizzle with a bit of olive oil and let rest for 30 minutes (or longer in the fridge). after resting, roll out the dough ball with a sprinkle of flour until it’s pretty thin. 
-preheat the oven to 350F. add to a parchment lined baking sheet. drizzle with a bit more olive oil and sprinkle with granulated garlic. bake for 10-12 minutes, remove from the oven, and add the toppings. 
-note** when adding fresh mozzarella, drain the liquid and let sit on paper towels to soak up ANY moisture. this will ensure your flatbread doesn’t get watery. 
-after adding the toppings, bake for 10 more minutes or until crispy and the cheese is browned. remove from the oven, top with any arugula/spinach, slice and enjoy!

30 minute sheet pan meal ✨ maple dijon glazed sa 30 minute sheet pan meal ✨ maple dijon glazed salmon, crispy potatoes, and broccolini— one of my favs for a quick & easy meal! the key to a good sheet pan meal is including things that will cook in the same amount of time and this one checks out in 30 minutes!

ingredients:
-2 or 3 salmon filets
-2 tbsp dijon mustard
-1.5 tbsp maple syrup 
-sprinkle of paprika 
-sprinkle of granulated garlic powder
-sprinkle of sea salt + pepper
-about 6-8 small golden potatoes, cut into small pieces
-a small bunch broccolini
-drizzle of olive oil

for the salmon:
-pat dry the salmon. add to the sheet pan lined with parchment paper. generously sprinkle the salmon with paprika, garlic, salt and pepper. in a small bowl, combine Dijon and maple syrup. coat each pieces of salmon with the glaze. 

for the potatoes:
-cut the golden potatoes into small, bite sized pieces. in order for everything to cook evenly for the same duration, it’s important the potatoes are cut pretty small. add them to the sheet pan and toss with about 1 tbsp olive oil. sprinkle generously with paprika, garlic, salt, and pepper. 

for the broccolini:
-add to the sheet pan and drizzle with a generous amount of olive oil. use your hands or tongs to ensure most of the veg is coated in the oil. sprinkle with garlic, salt, and pepper to taste. 

bake for 30 minutes at 350F (depending on your oven temp you make need to give or take 5 minutes each way). serve up and enjoy!

ingredients (2-3 servings):
-1 small sweet potato, chopped (small pieces so they cook evenly with the rest!)
-1/2 small zucchini, diced 
-1 green bell pepper, finely chopped 
-1/2 white onion, finely chopped
 -1/2 cup of bacon, chopped (can use any protein you prefer)
-drizzle of olive oil
-1 tsp granulated garlic 
-1/2 tsp paprika 
-sprinkle of sea salt, to taste 
-cracked black pepper, to taste 
-optional: cilantro for garnish 

instructions:
-start by chopping up all your veggies and adding them to a mixing bowl. as noted above, chop your sweet potatoes pretty small so they cook evenly with the rest of the veg. if using a protein (like bacon) add that now too. mix in all seasonings with a drizzle of olive oil. 
-after mixing, you can portion into 2-3 servings. I like to store them in ziplocks or containers so they’re prepped and ready to add to the air fryer whenever. *tip: if using zucchini, add a paper towel to the bottom of the container to soak up any extra water as they sit prepped. 
-once ready to eat, all you have to do is add one portion to the air-fryer for 20 mins at 350F (180C). you can serve with a fried egg and avocado or just eat as is. enjoy!

homemade juice shots (without a juicer!) 🍊 I’ homemade juice shots (without a juicer!) 🍊 I’ve been making a batch of these to drink in the mornings and I truly look forward to them😍

ingredients (makes 2 small shots):
-1 carrot, coined 
-1 inch ginger knob (unpeeled is fine!)
-juice from 1 large orange 
-juice from 1 small lemon 
-1/2 tsp ground turmeric (or 1 inch knob of fresh)
~1/2 cup coconut water
-pinch of pink Himalayan salt 
-tinyyy bit of black pepper to enhance the turmeric 

Blend all ingredients together in a high powered blender for about 30 seconds. Use a fine mesh strainer over a bowl or wide mouth jar to to strain the pulp out. Portion into single serve mini jars or drink as is. Enjoy🧡🍊

sriracha honey salmon lettuce wraps🍣 my ideal m sriracha honey salmon lettuce wraps🍣 my ideal meal—sweet & spicy salmon bites, rice noodles, mango, lime, crunchy red cabbage, all in a cute lil butter lettuce wrap🥹

ingredients (serves 1):
-8 to 10 oz fresh salmon filet, cut into cubes, skin removed
-1 tbsp sesame oil
-2 tbsp coconut aminos
-1 tbsp sriracha sauce
-2 tbsp honey
-1 clove garlic minced
-3 butter lettuce wraps
-3 oz rice noodles cooked
-3 tbsp shredded red cabbage
-lime wedge, juiced
-1/4 cup diced mango
-salt, pepper, and garlic powder to taste
-sesame seeds + green onions to garnish

instructions:
-Start by dicing your salmon filet into about 1-inch cubes and cutting the skin off of the salmon. Season with salt, pepper, and garlic until lightly coated.
-Heat sesame oil in a skillet on high heat. Once hot, add each piece of salmon leaving room between each one. -Cook for 1 to 2 minutes on each side or until golden brown.
-Meanwhile, make the sauce. Mix the coconut aminos, sriracha, honey, and minced garlic in a small bowl.
-Push the salmon pieces to the outer edges of the pan and pour the sauce into the middle on medium to high heat. -Let the sauce gently simmer until it thickens. When a glaze begins to form, coat the salmon pieces in the glaze.
-Cook rice noodles to package instructions. In a small bowl, juice 1/4 lime over the red cabbage and mix.
-Assemble your wraps by adding the rice noodles, glazed salmon, red cabbage, and mango. Garnish with sesame seeds and enjoy!

FOR THE MEATBALLS:
-2 lbs ground chicken
-100 grams feta, crumbled
-2 eggs
-1 tbsp flour of your choice, I used almond
-1/2 cup chopped spinach or herbs, basil or parsley work great too
-2 tsp ground cumin
-1 tsp garlic powder
-1/2 tsp salt
-1/4 tsp pepper
-1 tsp olive oil, for rolling

FOR BOWLS:
-quinoa or rice (I cooked mine in bone broth for more flavor)
-arugula base
-Greek salad: sliced cherry tomatoes, sliced cucumbers, thinly sliced red onion, tossed in 1 tbsp white wine vinegar, 1/2 olive oil, and sprinkle of oregano
-feta crumbled on top!

cranberry orange muffins 🍊 at this time of year cranberry orange muffins 🍊 at this time of year, this flavor combo is a staple 😍 fresh citrus + cranberries with a fluffy combo of oat/almond flour…can’t beat it!

ingredients:
1 ¼ cups oat flour
1 cup almond flour
2 tablespoons tapioca flour, divided 
1 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt 
1/2 teaspoon ground cinnamon
3 eggs
1/2 cup organic maple syrup
1/4 cup plain greek yogurt
3 tablespoons freshly squeezed orange (~juice from about 1/2 an orange)
2 tablespoons orange zest
1 teasoon vanilla extract
1 tablespoon coconut oil, melted
1 cup cranberries, finely chopped

instructions:
-Preheat your oven to 350 degrees F.
-Combine dry ingredients in a small bowl: oat flour, almond flour, one tablespoon tapioca flour, baking powder, baking soda, salt, and cinnamon.
-In a separate mixing bowl, whisk together eggs, maple syrup, greek yogurt, vanilla extract, orange juice, orange zest, and melted coconut oil.
-Add the dry ingredients to the wet ingredients and mix just until combined.
Next, chop the cranberries and combine with the remaining tablespoon of tapioca flour. TIP: add to a food processor and pulse 1-2 times to avoid chopping by hand. Fold cranberries into the batter. 
-Grease a muffin tin or line with liners. Add the batter and bake for about 15-20 minutes or until a toothpick comes out clean.
-optional: top with raw sugar cane, stevia, or monk fruit sweetener before baking- or drizzle with an orange glaze🍊

gingerbread snack cake✨ made with almond flour t gingerbread snack cake✨ made with almond flour to be gluten-free for the holiday’s🤎 optional, add these CUTE gingerbread men- they truly steal the spotlight 😂✨👀

ingredients:
-2 1/2 cups almond flour
-1/4 cup tapioca flour
-1 tsp baking powder 
-1/2 tsp baking soda
-pinch of salt
-2 tsp ginger
-1.5 tsp cinnamon 
-1/2 tsp nutmeg 
-3 eggs
-1/2 cup coconut sugar
-1/4 cup maple syrup 
-2 tbsp coconut oil, melted 
-1 tsp vanilla 

for the toppings:
-use your favorite white icing (I used a 8oz dairy-free cream cheese + 1.5 cups powdered sugar) but use what you love!
-sprinkle with finely shredded coconut, sweetened or unsweetened with both work (this gives it a snowy look❄️)
-top with mini gingerbread men (homemade or store-bought, I got mine locally but I believe Trader Joe’s carries some similar!

-Preheat the oven to 350F. 
-Combine dry ingredients in a small bowl: almond flour, tapioca flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg. 
-In a mixing bowl, whisk together eggs, coconut sugar, maple syrup, vanilla, and coconut oil. Add the dry ingredients to the wet ingredients and mix just until combined. 
-Add the batter to a parchment lined 8x8 square baking pan. Bake for 20-25 minutes or until a toothpick comes out clean. Let cool before adding icing. 
-Add your icing then sprinkle with coconut flakes to give a snowy look. Optional, add 9 Gingerbread men- one per slice. Store in the fridge & enjoy!
