Raspberry Pistachio Salad: This salad is a perfect blend of fresh, crunchy, sweet, and tangy! It’s made with fresh spring mix, pistachios, avocados, feta, red onion, and of course- raspberries! The star of the show here is really the creamy raspberry vinaigrette, made with real berries.
ingredients needed for raspberry pistachio salad:
Spring Mix: I chose to use a blend of spring mix, but spinach, arugula, or kale would be amazing as well!
Pistachios: The pistachios give a crunchy, slightly salty element that gives a great texture to this salad.
Fresh Raspberries: Used in both the salad and blended into the vinaigrette.
Feta: The feta cheese gives a creamy element to the salad. You can leave off the feta or use a different cheese of your choice as well.
Avocado: Who doesn’t love a little bit of added avocado?!
Red Onion: Unless you absolutely loathe onions, don’t skip them! They combine so well with the raspberry vinaigrette.
Grilled Chicken: I used an organic rotisserie chicken for convenience. You could of course leave off the chicken altogether, too.
For the dressing:
- Fresh Raspberries
- Extra Virgin Olive Oil
- Balsamic Vinegar
- Fresh Lemon Juice
When blending the ingredients for the dressing, the raspberries go in whole, giving it a creamy texture!
store-bought versus homemade dressing:
Although I love to use both store-bought and homemade dressings, sometimes it’s fun to make your own! You know exactly what ingredients go into your dressing and it doesn’t have any added preservatives or excess sugar. For that reason, the dressing tastes a lot fresher, but will not last as long in the fridge. This dressing serves 4 people, so if you don’t use all of it you can store it in an air-tight container for up to one week. I always store my dressings in a mason jar!
Raspberry Pistachio Salad with Raspberry Vinaigrette
- 5 oz spring mix
- 1/4 cup raspberries
- 1/4 cup pistachios shelled
- 1/4 cup feta crumbled
- 1/4 red onion thinly sliced
- 1/2 avocado sliced
- 6 oz rotisserie chicken
Raspberry Vinaigrette Dressing:
- 1 cup fresh raspberries
- 2/3 cup olive oil
- 1/4 cup balsamic vinegar
- 1/4 lemon juiced
- 2 tbsp honey
- 1 small cloves garlic
- Assemble your salad in the order in which the ingredients are listed.
- To make the raspberry vinaigrette, blend all ingredients listed under the dressing column in a blender. Start at a low speed and increase to a higher speed. The dressing should be creamy and a pale red color.
- Toss your salad in the dressing and serve.
