Birthday Cake Protein Balls

These birthday cake protein balls are the perfect well-balanced snack to make if you love birthday cake, sprinkles, and healthy snacks in general! They are filled with protein, healthy fats, and carbs, all wrapped up in a cute little ball!

Ingredients
  

  • 1/3 cup oat flour
  • 1 serving vanilla protein powder mine was 2 scoops
  • 1/4 cup almond butter
  • 2 tbsp honey
  • 3 tbsp almond milk
  • 1 tsp vanilla extract
  • 3.5 tbsp rainbow sprinkles

Instructions
 

  • In a large bowl, mix together oat flour and protein powder. Next, add in the almond butter and honey and begin to mix well.
  • When mixing, it may look as though the almond butter is not mixing into the dry ingredients fully. That's okay! Keep mixing until the clumps of almond butter are coated in the dry ingredients.
  • Lastly, add in the almond milk and vanilla extract. Mix well. The dough should begin to form, and everything should incorporate well. You want the mixture to be moist but not runny.
  • Optional: Add some sprinkles to your dough.
  • Begin to form into even, 1 inch balls. Once formed, add the sprinkles to a plate or small bowl and roll each ball to coat. Enjoy!

Notes

Store in an air-tight container in the fridge for up to 2 weeks.
You can substitute peanut butter but I personally recommend using almond butter for a less nutty flavor (to taste like cake batter!).
If your mixture is too dry and not forming, add a tiny bit more almond milk until it comes together. You do not want the dough too liquidy.
